Vindaloo Curry Powder

A fiery blend of spices to make the perfect vindaloo curry.

Chicken Vindaloo Recipe:

Ingredients:

  • 500g boneless chicken thighs
  • 50g vindaloo curry powder
  • 1 pepper, finely sliced
  • 1 large onion, finely sliced
  • 2 tbsp tomato puree
  • 200ml chicken stock

Method:

  1. In a large bowl, add the chicken, 30g curry powder and a splash of olive oil, mix well until fully coated and marinade for at least 2 hours.
  2. Heat oil in a pan and add the onions and peppers, cook until soft and caramelised. Add the chicken and cook until browned on each side.
  3. Add the tomato puree and 20g curry powder and mix until combined, cook for a further 5 minutes.
  4. Add 200ml chicken stock, bring to the boil before reducing the heat, simmer for 20-25 minutes until the chicken is cooked through and the sauce has reduced.
