An aromatic blend of spices inspired by the flavours of Thailand - perfect for making an authentic green curry.

Thai Green Curry Recipe:
Ingredients:
- 500g chicken breast or boneless thighs, diced
- 400g chestnut mushrooms, sliced
- 100g mangetout
- 100g trimmed green beans
- 2 spring onions, finely sliced
- 50g green curry powder
- 1 x 400ml tin coconut milk
- 1 chicken stock cube
- 1 lime, juiced
Method:
- Heat oil in a pan, add the diced chicken and fry for around 5-10 minutes or until cooked through, remove and set aside.
- Add the mushrooms to a pan and cook until soft, remove and set aside, add the curry powder to the hot oil along with a splash of fish sauce and cook for 1 minute or until fragrant.
- Add the coconut milk, 100ml water, stock cube, mangetout, green beans and lime juice to the pan and simmer for 10 minutes.
- Add the chicken and mushrooms and cook for a further 5 minutes, top with spring onions & serve.
