A korma is a tasty, mild & creamy Indian curry dish packed with flavours - this seasoning makes it simple to rustle one up from scratch.
Chicken Korma Recipe:
Ingredients:
- 500g boneless chicken thighs
- 50g korma curry powder
- 1 x 400ml tin coconut milk
- 1 large onion, finely sliced
- 25g cashew nuts
- 25g almonds
- natural yoghurt
- chillies (optional)
Method:
- In a large bowl, add the chicken, 30g curry powder and 2 tbsp yoghurt, mix well until combined and leave to marinade for at least 2 hours.
- While the chicken is marinating, heat oil in a pan and cook the onions until soft and caramelised, add the almonds & cashews and set aside to cool.
- Once cooled, add the onion mixture to a blender with the coconut milk and chillies (optional) and blend until smooth.
- Heat oil in a pan and sear the chicken until browned on all sides, add the onion mixture, 20g curry powder, 250ml water and bring to the boil.
- Cover and simmer for 20-25 minutes or until the chicken is tender.
- Serve with an extra dollop of yoghurt, rice & bread.
