A Spanish style meatball in a rich tomato sauce - serve with pasta, rice or on their own as a tasty tapas dish.
Ingredients:
- 400g pork mince
- 400g pork mince
- 100g tongmaster spanish meatball mix
- 2 x 400g tins chopped tomatoes
- 1 tsp tomato puree
- 200ml red wine
- 1 tbsp minced garlic
- 1 tbsp minced onion
- 1 tbsp parsley
- 1 tsp smoked paprika
Method:
- Add the beef & pork mince to a bowl and mix together, add the meatball mix along with 100ml cold (iced) water and mix by hand until thoroughly combined.
- Split the mince mixture into portions and roll into balls (we recommend smaller meatballs if serving as a tapas dish).
- Heat olive oil in a pan and brown the meatballs all over, once brown set aside.
- To the pan add garlic and onion and allow to fry for 1 min until soft, add the red wine and reduce.
- Add the tomatoes, tomato puree, paprika & parsley, season with salt & pepper and simmer for 10 minutes.
- Add the meatballs and simmer for a further 20 minutes until the sauce has thickened and the meatballs are cooked through.
