Patatas Bravas

 

A traditional Spanish tapas dish.

Ingredients:

  • 900g potatoes
  • 1 onion, diced
  • 2 tbsp minced garlic
  • 2 tsp sweet paprika
  • 1 tsp chilli powder
  • 250g chopped tomatoes
  • 1 tbsp tomato puree
  • sugar
  • parsley


Method:

  1. Preheat the oven to 200°C, heat olive oil in a pan and add the onion, cook until soft.
  2. Add the garlic, chopped tomatoes, tomato puree, paprika, chilli powder, sugar and a pinch of salt, bring to the boil and simmer for 10 minutes.
  3. Cube the potatoes into bitesized pieces and pat dry, add to a bowl and toss with some olive oil, paprika, chilli powder and salt, roast for 40-50 minutes, turning occasionally.
  4. When the potatoes are crisp and cooked through, add to a dish and top with the tomato sauce mixture.
