A tasty chilli recipe packed with flavours.
Ingredients:
- 1000g diced beef
- 2 x 400g chopped tomatoes
- 400g kidney beans - drained
- 2 onions - diced
- 5tbp minced garlic
- 2tsp ground cumin
- 2tsp ground coriander
- 2tsp smoked paprika
- 1tbsp dried oregano
- 2 dried ancho chillies
- 1tbsp peanut butter
- 1tsp ground coffee
- 1 beef stock pot
- 25g dark chocolate
- In a pan, toast the chillies on either side to release the flavours, remove and cover with boiling water and set aside for 15 mins. In a separate bowl, mix the cumin, coriander, paprika and oregano.
- In a hot pan, brown the steak on all sides and set aside, in the same pan, fry the onions until soft, add the garlic.
- Add the rehydrated chillies, spices, tomato puree and peanut butter to a blender and blend until smooth. add the mixture to the pan along with the meat and mix for 2-3 minutes.
- Add the tomatoes, stock pot and a dash of vinegar(optional) and bring to a simmer before adding the coffee and mixing thoroughly. Simmer for 2-3 hours - adding beef stock if necessary.
- Stir in the chocolate & kidney beans, simmer for a further 20 minutes.
- Serve with fluffy rice.
