Piri Piri Whole Roasted Chicken

 

A takeaway favourite made simple at home - this recipe uses a whole chicken, however can be made with thighs, breast or wings!

Ingredients:

  • 1 large whole chicken
  • 100g Tongmaster piri piri glaze (we also have a lemon & herb!)
  • 1 block halloumi 
  • 1 large red onion - roughly chopped
  • 1 aubergine - cubed
  • 100g green beans - trimmed
  • 1 courgette - sliced
  • 100g piri piri seasoning
  • olive oil
  • salt & pepper
Method:

  1. Preheat the oven to 200°C.
  2. In a large roasting tray, add the courgette, green beans, onion & aubergine, drizzle with olive oil (or alternative) and sprinkle over 30-40g piri piri seasoning, toss until all veg is coated.
  3. Rinse the chicken under cold water until wet, sprinkle on 50g piri piri glaze and rub in until coated, add more if necessary.
  4. Place the chicken on top of the veg & cook in the oven accordingly, in a bowl, mix olive oil with piri piri, brush this on the chicken halfway through cooking.
  5. While the chicken is cooking, slice the halloumi and fry in a hot pan  for approx 2 minutes on each side.
  6. When the chicken is cooked through, remove from the oven & serve alongside the roasted veg & halloumi.
