A takeaway favourite made simple at home - this recipe uses a whole chicken, however can be made with thighs, breast or wings!
Ingredients:
- 1 large whole chicken
- 100g Tongmaster piri piri glaze (we also have a lemon & herb!)
- 1 block halloumi
- 1 large red onion - roughly chopped
- 1 aubergine - cubed
- 100g green beans - trimmed
- 1 courgette - sliced
- 100g piri piri seasoning
- olive oil
- salt & pepper
- Preheat the oven to 200°C.
- In a large roasting tray, add the courgette, green beans, onion & aubergine, drizzle with olive oil (or alternative) and sprinkle over 30-40g piri piri seasoning, toss until all veg is coated.
- Rinse the chicken under cold water until wet, sprinkle on 50g piri piri glaze and rub in until coated, add more if necessary.
- Place the chicken on top of the veg & cook in the oven accordingly, in a bowl, mix olive oil with piri piri, brush this on the chicken halfway through cooking.
- While the chicken is cooking, slice the halloumi and fry in a hot pan for approx 2 minutes on each side.
- When the chicken is cooked through, remove from the oven & serve alongside the roasted veg & halloumi.
