Breakfast Sausage Muffins

 

A breakfast favourite made at home! Can be made low calorie, vegan & gluten free with tweaks!

(All of our seasonings are low calorie & vegan, gluten free can be requested at checkout!)


Ingredients:

  • 800g pork mince
  • 100g tongmaster old english complete sausage mix
  • Eggs
  • English muffins
  • Cheese 

Method:

  1. In a bowl, add the mince, sausage mix & 100ml water, knead until thoroughly combined.
  2. Press into round patty shapes using a burger press or your hands, set in the fridge for around 20 minutes - these can also be frozen at this stage - be sure to use burger discs to separate them and avoid sticking!
  3. Cook the patties in the grill until cooked through (approx 10 minutes), halfway through cooking, pop a sliced muffin under the grill and allow to toast.
  4. Preheat a pan with a splash of oil & cook your eggs (try using a mould to get that perfect round shape), burst the yolk during cooking to avoid a messy meal.
  5. Once cooked, remove the patties and assemble your muffin with the egg & cheese (1, 2, 3 patties? you choose!)
  6. Wrap the whole muffin in tin foil and pop in a preheated grill for 5-8 minutes, this will melt the cheese 7 give you the real fakeaway feel!
