A combination of warm, fragrant spices to make a traditional Jamaican style curry dish.
Jamaican Curry Chicken Recipe:
Ingredients:
- 500g boneless chicken thighs
- 1 large potato, peeled & diced
- 2 carrots, peeled & diced
- 50g hot Jamaican curry powder
- 200ml coconut milk
- 1 tbsp dried cut thyme
- In a large bowl, add the chicken, a splash of oil and the curry powder, mix well until combined and leave to marinade for at least 2 hours.
- Heat oil in a pan and add the chicken, fry until lightly brown on all sides, add the potato, carrot & thyme, cover with water, cover and cook for 25 minutes.
- Stir in the coconut milk and cook for a further 5-10 minutes or until thick.
- This also works great in the slow cooker!
