Gluten Free Black Pudding Mix

A traditional blend of herbs and spices containing everything you need to make your own Gluten free black pudding – just add meat and water!

Recipe

  • Gluten Free Black Pudding Mix - 1.5kg
  • Beef fat - 540g
  • Beef Suet - 960g
  • Warm water 40°C - 1.5kg
Method

  • Mince fat and suet where applicable through a fine plate (5mm)
  • Add black pudding mix and mix thoroughly
  • Add warm water (40°C) and mix to a slurry
  • Let stand till cool. (this allows the mix to firm up for ease of filling.)
  • Fill into casings and cook at 80°C for approximately 50 - 60 mins
