Fish Masala Curry Powder

A blend of delicate spices perfect for complimenting fish - use as a dry rub or make a tasty fish masala curry!

Fish Masala Curry Recipe:

Ingredients:

  • 500g white fish (cod, sole & halibut work great)
  • 50g fish masala powder
  • 3 cloves garlic, finely diced
  • 1 x 400ml tin chopped tomatoes
  • 1 tbsp tomato puree
  • fresh chillies (optional)
  • fresh coriander
Method:

  1. Heat oil in a pan and add the masala powder & garlic, fry for 1 minutes or until fragrant before adding the tomato puree, mix well until combined and cook for a further 1 minute.
  2. Add the chopped tomatoes and bring to a simmer, cook for around 10 minutes until it reduces to a thick paste consistency, add the chillies here if you wish.
  3. Prepare your fish & add around 250ml water to the tomato mixture, bring to the boil, once bubbling, add the fish.
  4. Cover and simmer on a medium heat for around 10 minutes or until cooked through, top with fresh coriander & serve.
