A complete mix containing a blend of aromatic spices such as mace and all spice to create a traditional tasting faggot.
Method:
- Blanche 455g liver by immersing it into boiling water for approximately 5 minutes.
- Mince the liver, along with 800g cooked meat through a coarse plate.
- Mince 115 cooked rinds through a fine plate.
- Mix the liver, meats and rinds together with the 500g faggot mix and mince again if required.
- Add 650g water and mix thoroughly
- Shape into portions and bake for approximately 1 hour at 180°C.
