A leavening agent often used in to increase the volume and improve texture in baking.
- Baking powder is a raising agent which produces carbon dioxide when liquid is added, forming bubbles that cause a mixture to expand.
- Commonly used in cake making to achieve a light, fluffy texture.
- If using in a mixture, prepare to cook the mixture as soon as the baking powder begins to react with any wet ingredients, this way, the maximum rise can be achieved.
- Self-raising flour is made from a mixture of plain flour and baking powder, if making your own self-raising flour, use 1tsp baking powder to 110g plain flour.
- Store in a cool, airtight space.
