Achar Masala Seasoning (Indian Pickle Spice)
Often referred to as pickle spice, this blend of rich,
aromatic spices is ideal for use in pickling fruits & veg – creating a
classic spicy, sour pickle taste.
This can also be used as a spice blend, adding to sauces,
curries & using to garnish traditional dishes such as khichu (a snack made
from rice flour)
Pickle Recipe (garlic achar):
Ingredients:
- 200g peeled garlic cloves
- 20g achar masala spice
- 100ml mustard oil
Method:
- Add the garlic & spice mix to a bowl, mix until combined.
- Transfer to a jar & pour over the oil, assuring garlic is fully submerged.
- Leave to pickle for around 1 week, keeping out of direct sunlight, store airtight at room temperature for up to 5 months.
